There also are many excellent coffee substitutes that contain ingredients such as roasted dandelion root, chicory, acorns, and roasted barley. Beverages made from these roots, nuts, and grains have a rich, earthy flavor that will diminish your cravings for coffee.

Dandelion and Chicory Coffees

To make dandelion or chicory coffee, you need to roast the roots. Dig up the roots and wash them well, scrubbing off the dirt with a vegetable brush. Slice the roots lengthwise and allow them to dry in a warm, dry location. Once they’re dry, roast them in a low oven (about 200 degrees) for about 4 hours, or until brown and crisp. Cool completely, then store in a sealed glass container in a cool, dark location.

To brew a cup of “coffee,” use 1 heaping teaspoon of dried roots per cup of water. Either simmer the roots in the water for 10 minutes or, for a drip machine, place them in the paper-lined basket, just as you would ground coffee beans.

Warming Winter Tea

This tea can be a good noncaffeinated substitute for coffee.

4 cups springwater

2 teaspoons roasted dandelion roots (see instructions for roasting above), crushed

½ teaspoon cinnamon bark, crushed

½ teaspoon dried gingerroot, crushed

½ teaspoon decorticated cardamom pods, crushed

½ teaspoon star anise, crushed

Milk (optional)

Honey (optional)

Bring the water to a boil and then remove from heat. Add the herbs, cover, and let steep 15 minutes. Add milk and honey if desired.
